How do I make subcategories in my catalog? The documentation on this is going to an older version and doesn't match what I see on my screen.

Go to the main category or the parent category where you wish the sub-category to appear. On the upper right you have a "Add New" button, this is a drop-down button with one of the options "category", choose that option, fill in the blanks, you're all set.
Please note that you also have the ability to move categories, this is done at the category grid, click the category you wish to move, and click the update button ontop to reveal options.

I was able to create a category and then choose to move it under the desired parent category. Now when I view the category tree in admin I can't see it at all. I can find it if I search for it, but otherwise it doesn't show up.

In order to view the subcategory, you need to know what the parent category is. Click the parent category, and it will drill down into multiple parts which includes products, webpages or categories.
I usually keep my categories on top, so if you click on a parent category, the default subcategory should be on top of products, but if for some reason the subcategory is not in the position that you wanted to be, just use the arrows on the left to move it up or down. I know it's a little bit tricky, but once you get used to it, it works fine.
