Don't know how you would change this- I guess merchant would need to change all the values also since these values are stored as comma delimited string.
Google has changed some of their wordings:
shopping actions is now Buy on Google listings, for example. It looks like they still accept the old values, though.

Joe, you are right about the Google excluded destination wordings changes. According to Google, the old values will still be acceptable but they recommend to update them to new values.

I have created a bug report to discuss about the best way to handle this. The merchant probably need to update products using product batch edit feature or import/export once the new values in place.
