How can we get our Sales Reports to only include paid sales? Our reports will include canceled, unpaid and on-hold sales in the totals and we need to show only completed sales.

You can configure this from the Order Statuses config page in admin. Please go to admin Configure - Store - Order Statuses.

You can edit each order status check/uncheck Show order data in reports.
